Thai Monkey Club(credit: Thai Monkey Club)

There are a lot of different types of curry dishes out there, as the dish originated throughout the Indian and Southeast Asia regions. The most common feature in all curry dishes is the use of a very complex blend of spices with dried hot peppers, but there are so many different types of curries that no two bowls are ever the same. Luckily, there are lots of different places all over Colorado where you can take a trip around the culinary world, sampling curry dishes from many different cuisines. If you aren't sure where to start, here are five spots serving up wonderful bowls of curry (or curry-inspired dishes) that are worth your immediate attention.

Denver, CO 80205

Biju's Little Curry Shop is just what it sounds like. It's a small restaurant that is focused only on curry, and many different types of curry. It's advertised as "Southern style curry" that stays true to south Indian flavors and recipes. Biju's is not set up like your average sit-down dining establishment, either. It's more like one of those popular fast-casual spots, where you can watch your meal being prepared as you order down the line. Then just pick your favorite curry flavors. You can enjoy the flavor-packed vegetarian option with cashews and date biriyani, spiced lentils, sauteed cabbage and ginger with shallot yogurt. Or opt for the coconut curry chicken, extra hot vindaloo chicken bowl or the masala beef bowl. Depending on how spicy you like your curry, you can customize your bowl to your tastes, and if you've never entered the world of curry before, the staff is always happy to recommend some new dishes and to guide you on your curry adventure.
