El Coco Pirata is one of the more authentic places on this list to get great ceviche. The ceviche is made with shrimp and octopus and served in a half oyster shell. Lola Mexican Fish House is a slightly upscale Mexican restaurant located right in the Denver Highlands. The guacamole is some of the best in the city, and they feature three wildly different ceviche dishes consisting of either shrimp, Hawaiian Marlin or crab along with various vegetables and marinades that make them unique. Located on the corner of 10th and Lincoln, 100% De Agave is one of Denver's best Mexican restaurants. Don't worry about trying to find parking, as they allow complimentary parking at the Beauvallon parking garage right next door. As far as the ceviche goes, they offer a choice between shrimp, octopus, fish or scallops with either original, tamarid or mango marinades. It really doesn't matter which pescado path you choose, as you will undoubtedly be satisfied.
