There is something about the crisp start of fall that calls for a freshly baked apple pie. Tart Granny Smith apples blanketed in a buttery crust is pure comfort food for autumn. Denver’s best pie bakeries add caramel fillings to the American lexicon of desserts, while still others grate in sharp cheddar cheese to the crust. And all can provide pies for your holiday parties. Humble Pie Store
300 Elati St.
Denver, CO 80223
Humble Pie opened in October 2012 and it’s been opening eyes as to what a great pie can be ever since. At Humble Pie, the apple pie is far from humble. The shop takes a lesson from New England pie lovers with sweet and tart baked apples, topped with a sharp cheddar lattice. If you prefer your apple pie through a straw, try the pie shakes made with Sweet Action ice cream. Pies are available by the slice, a five-inch round or a whole pie.

Denver, CO 80202
Wednesday’s Pies is a basement pie shop with a compact space and generous flavors. The pie shop used to be open only on Wednesdays but now pie lovers can partake any day they have a pie craving. Wednesday’s Pies typically only has three pies, one an apple caramel with Tart Granny Smith apples cloaked in a sweet caramel sauce. Executive chef Tim Murphy adds almond flour to a butter crust to give the pastry a little something extra. The other pie flavors vary but fan favorites include Oreo cream pie, a cream pie chocked full of Oreos and topped with finely crushed Oreos. It’s a bit like the childhood dirt cakes or mud pies. Another favorite pie is the ricotta pineapple, with a creamy and tropical pineapple filling.
