Apple Cinnamon Almond Butter Energy Bites Recipe

Ingredients:

8oz (1 cup packed) chopped dates

½ cup honey

1 Tbsp chia seeds

1 Tbsp ground flax seeds

Pinch of salt

1 tsp cinnamon

1 ½ cup old-fashioned oats (dry, not cooked)

¼ cup almond butter

1 cup dried apple, chopped

1/3 cup dark (at least 60%) chocolate chips (optional)

 

Directions:

Combine dates, honey, chia, flax, and salt in a food processor. Pulse until smooth and combined. You should be able to stir the mixture, if it is too thick, add another tablespoon or two of honey.

Transfer to a large bowl. Stir in oats, almond butter, dried apple, and chocolate chips until evenly combined (it's an arm workout!).

Use a spoon or cookie scoop to shape the mix into 1-2" balls. Refrigerate 15-20 minutes.

Alternately, you can line a small baking pan with parchment paper, press the mix evenly into the pan, let it cool in the refrigerator for 15-20 minutes and cut into bars.

Store covered in the refrigerator for up to 2 weeks.

Recipe makes 20 energy bites. Each bite: 150 calories, 4g fat, 1g saturated fat, 33mg sodium, 28g carbohydrates, 3g fiber, 17g sugar, 2 g protein.
